First, preheat oven to 180 degrees Celsius (350ºF) and spray a bread pan with coconut oil cooking spray or lay the parchment paper.
Place all dry ingredients into a bowl and mix well.
Shred zucchini with a grater. Set aside for about 5 minutes until gets more liquid. Then put shredded zucchini into your palms and squeeze water. You can also use any cloth or cheese cloth for squeezing.
Place the rest of the wet ingredients into the pot with zucchini and mix all together. Then slowly add it to the dry mixture and mix well until your batter is completely combined.
Pour batter into bread pan and bake it for about 50-60 minutes or until a toothpick comes out clean.
