Instruction:

  1. Heat the coconut oil in a skillet until slightly warm (not hot). Add the garlic and stir-fry for about 30 seconds over a mild temperature, then add the ground ginger.
  2. Add the chicken, which you cut into thin slices beforehand, and cook for about 5 minutes until the chicken gets a little bit cooked.
  3. Stir in the coconut milk, curry paste, chicken broth, lemon grass, and the rest of the veggies. Bring to a boil, then turn the heat down and simmer for another 10 minutes.
  4. Remove from heat and if you like, garnish with fresh cilantro. I didn´t have it so I didn´t use it. But normally I do use it.
  5. Serve immediately over cooked rice. I recommend using jasmin rice. White or brown.
