- Prepare the frying pan. Slice onions and mushrooms and fry it together with olive oil on a low heat, when cooked (about 5minutes) add 1 tbsp of flour and stir for 1 min. Season with pepper and salt.
- Meanwhile cook rice and chicken in separate pots. Do not add any seasoning. When cooked, put aside. Slice fresh parsley on cutting board and put aside.
- Place the onion and mushroom mixture into Vitamix, add the half of cooked rice, half of sliced almonds, the chicken broth and milk-cream mixture. Set the “soup” program and let the soup cook until the program is done.
- When the “soup” program in Vitamix is ready, open the small cover and add the rest of the rice, almonds, parsley and chicken. Set the level 2 on Vitamix and let it mix for 5 more seconds.
Now, if you don´t have Vitamix, blend it in a regular mixer and then move the soup to a pot and bring the soup to boil.
When the soup is cooked, place the hot soup into a blender and add remaining ingredients – the rest of the rice, almonds, parsley and chicken. Let it mix for a while until ingredients are partly mixed, do not let ingredients blend totally in a liquid.
I really hope people who don´t have Vitamix will also benefit from this recipe. I guarantee you the texture and the flavour is super delicious.
