Preparation of Vegetable Curry

  1. First prepare barley. Cook it in the water until it absorbs all the water. I used 1 cup of barley and 2 cups of water. Add salt.
  2. Heat the coconut oil in a saucepan. Cook sliced onion for 2-3 minutes, then add cauliflower, sweet potato, coconut milk, vegetable broth and all the spices.
  3. Let it simmer for about 25 minutes until the vegetables are tender. If needed add a bit of water when the sauce is too thick.
  4. Serve the vegetable curry with barley
