Bake salmon in the oven under 180 Celsius (356 Fahrenheit) for about 8-10 minutes. Let it cool down for a bit.
While salmon is cooling down, prepare mango salsa. Peel mango and cut it into cubes, place in a bowl. Add garlic which you cut into very tiny pieces, add cubed tomatoes, 1 tbsp of lime juice and chopped coriander.
When salmon is cool, place it in a food processor and process very quickly, do not let the salmon to become a puree. Just mix few seconds in a mixer or alternatively, chop salmon fillets into small strings/slices.
Chop spring onion and add it to a burger batter, add chilli, salt, pepper, egg and 1 tbsp of fresh lime juice. If the batter is too liquid, add for instance psyllium powder to thicken it.
Make patties and fry them on a pan with little olive oil for frying or a butter.
Serve with mango salsa. You can also serve it cold. Both taste very good 🙂
