Heat oven to 180 °C (350 °F). Place a parchment paper on a baking dish.
In a bowl, whisk eggs together with brown sugar. Add baking soda, salt and stir well. Add vanilla extract and peanut butter. Mix well and at the end stir the oats or any other flour you decide to use.
Use a scoop or a spoon to scoop the dough onto your baking dish and form cookies. The size and shape is up to you 🙂 If you want to use chocolate chips, sprinkle them on the top before placing the dish into the oven.
Bake for about 12 minutes. Then remove from the oven and let it cool.
