First mix the spelt flour, dried basil, salt and olive oil. Then sautee the spinach on a bit of water until it looses the volume. Add the spinach together with the water into the flour mix. Stir well, place it on the kitchen foil,close it and keep it in the fridge for few minutes and meantime prepare other ingredients.
Sweet potatoes chips preparation:
Cut the potatoes into thin circles. Place the parchment paper on the baking dish and put sliced potatoes. Sprinkle with olive oil and season with salt and pepper. Put it to pre-heated oven at 200 celsius (390 Fahrenheit) and bake for about 15 minutes until crispy.
Meantime, cut the chicken breast into slices and grill or fry it on a bit of olive oil on the pan. Season with salt and pepper.
On the side prepare the lettuce leaves, cut the cucumbers into small circles, set aside.
In a bowl, mix curd cheese, philadelphia, mustard, add salt, pepper and garlic. Set aside.
Take the tortilla dough from the fridge and roll the dough to make tortillas. Put a bit of spelt flour underneath so it doesn´t get too sticky. Fry it on a pan without any oil. Each side for about 2 minutes.
When ready, spread the philadelphia mix on each tortilla, add lettuce leave, cucumbers and chicken, and roll it.
Serve with sweet potatoes chips or salad. Calories above indicate 1 portion of tortillas together with 1 cup of sweet potatoes.
