Preparation

  1. Preheat oven to 180 degrees Celsius (about 356 Fahrenheit) and grease a loaf tin with a coconut oil/spray.
  2. Beat eggs and sugar together until the volume doubles, for about 5 minutes.
  3. Take another bowl and mash avocado well.
  4. Add the flour and baking powder to the mashed avocado and add all to the sugar egg mixture. Mix well.
  5. Pour the batter into the loaf tin and bake it for about 40-45 minutes. Insert a tooth pick into the centre and if it comes out clean, then the cake is done.
  6. Allow to cool completely before taking out of the loaf tin.
  7. When you do icing, then pour it on the top of the cake only when the cake is completely cool.
