A simple and delicious, just 5 ingredient Avocado Cake makes for a perfect treat! No Butter, No Oil, but still a super soft cake! This cake is a guilt free snack!
I love avocado! I do love it mostly in salads or prepared as a bread spread. But recently I discovered that avocado tastes delicious as an ingredient in baked goodies – like for example this avocado cake I prepared just few days for my friend.
Baking avocado is great especially for those who don´t really like the taste of avocado, but still want to eat healthy.
As you might know, avocado is a nutritious superfood, which contains many nutrients beneficial for your body. Check more for benefits of eating avocado.
For those who are vegans and cannot use dairy products, just omit using eggs in this avocado cake recipe.
Avocados contain a high water content, so they can make treats softer and chewier, which means eggs are not that necessary. Avocados can be used as a substitute for butter or oil in baked recipes like cookies, cakes or muffins to help make them work within a vegetarian or vegan diet.
Though the result may vary slightly by recipe, it may be necessary to add another liquid to balance the recipe and “thin out” thicker batters. You can freely use water, almond or hazelnut milk. Depending on the amount of batter, 1/4-1/2 of the cup should be enough.
I initially wanted to make a lemon frosting for this avocado cake, but I didn´t have all ingredients at home. I bet lemon frosting would be a perfect fit for this cake.
Here´s how you prepare the Lemon Frosting
You´ll need: 1 tbsp fresh lemon juice, 1/2 cup icing sugar, anything to garnish – I recommend pistachios.
- Mix together lemon juice and icing sugar until you have smooth icing.
- Spread it on the top of the cake and sprinkle over crushed pistachios.
Since it was a little “too naked” to eat just an avocado cake, I prepared a simple chocolate frosting
Here´s how you prepare the Chocolate Frosting
You´ll need: 50 g dark chocolate and 1 tbsp coconut oil
- Melt the coconut oil on a sauce pan and add the dark chocolate. Let it melt completely.
- Spread it on the top of the cake. I didn´t use the pistachios as you can see on the picture, but feel free to use them.
