Coconut Banana Muffin Recipe

If you have a sweet tooth, and you want to enjoy a treat that is free of refined sugar, this naturally sweetened coconut banana muffin recipe is a real treat for you.

I was inspired by cookieandkatie.com to bake this delicious muffin recipe. I adjusted couple of things to make this already perfect recipe even more perfect 🙂

For those who love coconut you will absolutely love this muffin recipe! These muffins are rich in coconut flavour, yet when you bite in you´ll still taste a banana flavour, which is an interesting addition to this muffin recipe.  So if you like a combination of banana and coconut, I´m sure you´ll fall in love with this sweet, bright flavour and contrasting textures in these little treats!

I don´t know how about you, but I gotta be in a good mood when baking my treats. Make sure you´re too, and then it will guarantee you´ll have an absolutely delicious result.

The original recipe by cookieandkatie.com uses a table spoon of sugar, however, I decided not to, I only used a coconut sugar to sprinkle on the top of the muffins. It gives it a nice sweet flavour to it. So feel free to use it or not and if you want a bit sweeter taste in muffins, then add one or two table spoons of coconut sugar in the batter.

This delicious muffin recipe is perfect for breakfast, brunch, snack time, you name it! Just get yourself in a good mood and get ready for baking!

Ingredients
  • 3/4 cup whole wheat flour
  • 1/2 cup coconut flour
  • 1 1/2 tsp baking powder
  • pinch salt
  • zest 1/2 lemon
  • 1/2 cup coconut oil
  • 1 mashed ripe banana
  • 1/4 cup honey
  • 2 eggs
  • 1 tsp vanilla extract
  • 3/4 cup shredded coconut unsweetened
Servings: muffins

Instructions

  1. Preheat oven to 190 Celsius (375 Fahrenheit). Place muffin tins on a baking form and set aside.
  2. In a bowl, whisk together the dry ingredients - flours, baking powder, shredded coconut, salt, lemon zest.
  3. In a separate bowl, whisk together the wet ingredients - eggs, mashed banana, melted coconut oil, honey and vanilla extract.
  4. Then pour the wet ingredients into the bowl with dry ingredients and stir well.
  5. Pour the batter into prepared muffin tins, if you like sprinkle them with a bit of coconut sugar.
  6. Bake for about 20 minutes, or until a toothpick inserted comes out clean. Let them cool and enjoy!

Spoil your fur baby with my homemade dog birthday cake recipe. This is a delicious, healthy and  dog birthday cake recipe for your pet.  Have fun celebrating another year with your pet.

Our furry friends bring us so much joy that we actually do not need any reason to spoil them. However, all of us want to treat them special when their birthday rolls around. That’s where the dog birthday cake recipe comes in!

If you follow this blog, you´re one of these people that try to cook and bake healthy, so I´m pretty sure if you own a doggie, you´d want your furry baby to have some healthy treats as well.

This dog birthday cake recipe is of course not only suitable for your pet´s birthday; you can also use this recipe for doggy treats, in any shape or form. You can see that I did not only bake the cake but also made small treats in form of bone or paw, they look cute and your dog will love them.

If you want, you can follow exact recipe below, but if you´re creative and want to substitute ingredients or make your own version of a dog birthday cake recipe, then I´d like to guide you through ingredients that are dog friendly.

Flour you can use to bake pupcake

Ingredients
  • 1 egg
  • 3-4 tbsp peanut butter unsalted
  • 150 grams pumpkin puree no sugar
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
  • 2 tbsp honey
  • 1 carrot shredded
  • 1 cup whole wheat flour you can substitute by any other dog friendly flour (see above)
  • 1 tsp baking soda

Instructions:

Preheat oven to 350 degrees F (175 degrees C). Spray a baking form with a non-stick cooking spray.

In a bowl add the egg, peanut butter, coconut oil, vanilla, and honey and stir well. Stir in the shredded carrots and mix thoroughly. Add the flour and baking soda and mix well. Spoon cake batter into prepared form. Bake in preheated oven for about 20-25 minutes.

Let it cool and use your creativity to decorate the cake. I used the greek yogurt as a frosting, simple as that 🙂

Baked Chicken and Quinoa recipe with Parmesan and Tomato Sauce

Baked chicken and quinoa recipe is a very easy, quick and healthy lunch or dinner recipe you can prepare for your friends and family. You can find the recipe below.

Quinoa, pronounced as ‘keen-wa’ is a great wheat-free alternative to starchy grains. This grain is one of the world´s most popular super foods.  Quinoa is not only gluten-free, but also high in protein and contains all nine essential amino acids. It´s also high in many minerals and vitamins, such as fiber, magnesium, iron, potassium, phosphorus, Vitamin E, etc.

There are 2 types: Red and White. Both are grown in South America (Peru, Bolivia and Chile). It´s a healthy substitute to rice, couscous or bulgur.

Benefits of Quinoa

High in protein and all amino essential acids

Quinoa is most famous for being one of the only plant foods that provides complete proteins, offering all essential amino acids. One cup contains 8 g of protein.

High in fiber

One cup of cooked quinoa contains 21 % of the recommended daily intake of fiber, which is great  for your gut. Quinoa is also more easily digestible than many other grains.

Gluten-free

Quinoa is naturally gluten-free, therefore it is perfect for gluten-free diets. Studies have shown that by using this grain instead of typical gluten-free ingredients like refined tapioca, potato, corn and rice flour, it can largely increase the nutrient and antioxidant value of the diet.

Anti-inflammatory benefits

According to some studies, quinoa may help decrease the risk of many types of inflammation diseases. Nutrients in this grain help promote healthy gut microbes, which is important for preventing obesity, inflammation and disease.

Provides good metabolic health

Thanks to the high amount of beneficial nutrients, this amazing grain helps to improve metabolic health. Substituting other gluten-free products like bread or past with quinoa can significantly reduce blood sugar and insulin.

Great for heart health

This grain has a high level of heart healthy fats. It contains about 4 g of fat per cup and contains no trans-fats. 25% of fat in quinoa is oleic acid (healthy monounsaturated fat), 8% is alpha-linolenic acid (type of omega-3). Alpha-linolenic acid has been shown to decrease risk of heart attacks.

Ingredients
  • 1 cup quinoa
  • 1 green bell pepper
  • 1,5 cup mushrooms
  • 1/2 cup onion
  • 200 ml tomato sauce some sauce you´d also use for pasta dishes
  • 1 cup chicken broth
  • 1 tbsp garlic, powdered
  • 2 tbsp whole wheat flour
  • 1 cup shredded parmesan
  • 2 tsp garlic, powdered
  • 4 chicken breasts boneless
  • salt & pepper to season

Preparation of Baked chicken and Quinoa recipe with Tomato Sauce and Parmesan

  1. Preheat oven to 190 degrees Celsius (375 Fahrenheit) and spray a baking dish with cooking spray.
  2. Prepare veggies - Dice onions, green bell pepper and mushrooms.
  3. Place 1 cup of uncooked quinoa on the bottom of baking dish and then add veggies.
  4. Add tomato sauce, chicken broth and 1 tbsp of minced garlic on top of the veggies and mix everything together. Set aside.
  5. In a bowl, mix together flour, shredded parmesan, and 1 tsp of garlic powder. Then, in a separate bowl crack an egg and whisk.
  6. Dip the chicken breast into the egg and then into the parmesan-flour mixture. Place the chicken breast on quinoa mixture. Do the same with all chicken breasts.
  7. If you´ve got some parmesan-flour mixture left, sprinkle it on top of the chicken and add more cheese if you want. Finally, season it with salt and pepper.
  8. First bake it uncovered for 20 minutes. Then, cover with aluminium foil and bake for additional 25 minutes.

  • 2 or 3 ripe bananas
  • 2 cups whole wheat flour
  • 1 tsp baking soda
  • 2 eggs
  • pinch salty
  • 2 tbsp honey raw
  • 2 tbsp ghee butter or coconut oil

Preparation:

  1. Preheat the oven to 175 degrees Celsius (350 deg. Fahrenheit).
  2. Prepare 2 bowls. In one combine flour, baking soda and salt. In the other mix ghee butter or coconut oil, honey, add eggs and bananas and blend it together (I used kitchen robot). Stir both (flour and banana) mixtures together and batter it into a loaf pan which you grease before with oil or butter.
  3. 3. Bake in the oven for about 55 minutes. You can check it if it´s done well with inserting a toothpick into bread, if it comes up clean, it´s done!

I really hope you´ll try this out. It´s even healthier and still tasty if you don´t put any sugar or honey. Optional are dried fruits which could substitute the sweet flavour. You can also serve it for guests as a dessert or take it to your work as a post-lunch snack. Or just kill your sweet cravings!
