Blueberry Oatcake – Easy & Quick Recipe

This Blueberry Oatcake features fresh blueberries and whole grain oat flour – perfect dessert in summer!

I love any kinds of berries, they are my favourite because they are so delicious, refreshing and low on sugar. If you are a fruit freak and you care about how much sugar you eat then this is the best fruit you can eat.

Since healthy baking is my favourite hobby, I decided to bake an awesome delicious yet healthy blueberry oatcake. This cake consists of healthy ingredients like blueberries, poppy seed, whole grain oatmeal, coconut oil, cinnamon, curd, etc.

It can be served as a dessert or even for breakfast!

Ingredients
  • 2 cups whole grain oatmeal Dough
  • 1/2 cup coconut oil
  • 1 1/2 tbsp poppy seed
  • 2 tbsp maple syrup
  • 2 tbsp water
  • 1 tsp cinnamon
  • pinch of salt
  • 1/2 cup quark (curd) Filling
  • 3/4 cup fresh blueberries
  • 2 tbsp maple syrup
  • 1 egg white

Preparation: 

Dough: Blend the oatmeal in a mixer until you get the oat flour. Transform the flour in a big bowl, then add poppy seed, cinnamon and salt, mix well.  Then add cold coconut oil, maple syrup and water. Mix well together and refrigerate for about 15 minutes. Meantime prepare the filling and set your oven to 200 degrees Celsius (392 Fahrenheit).

Filling: Mix well all ingredients (except blueberries) together in a bowl.

Prepare a round baking form, spray with a cooking spray or simply grease it with a coconut oil you used for the dough. Place in it the dough you took from the fridge (the dough should be a bit firmer), spread it over the form pressing with your fingers. Pour the filling on the top and add and spread the blueberries evenly.

Bake in the oven for about 35-40 minutes. Not more like I did because you might burn it (duuh) like I did as you can see on the picture 🙂 It still tastes fresh and delicious!!!
