Peanut Butter Oatmeal Cookies

These healthy peanut butter oatmeal cookies are easy to make with just 7 ingredients. They are gluten-free, flour free and are very delicious!

If you´re a fan of peanut butter and cookies, you will love it. You can experiment with this recipe and switch some ingredients, for example brown sugar for stevia or oats for coconut flour. The flavour might change but they will still be delicious peanut butter cookies.

I mentioned these peanut butter oatmeal cookies are gluten free, they are because I used gluten-free oats. Or just simply use something else, like a coconut flour, for instance.

If you would like to make these peanut butter oatmeal cookies vegan, use flax eggs instead of diary eggs.  And make sure to use vegan chocolate chips in case you´ll use these.

If you do not want a saltier version of these cookies, just use the peanut butter without salt. In my opinion, it´s tastier and healthier. ee

Ingredients
  • 2 eggs
  • 1/2 cup brown sugar 1 cup = 180 ml
  • 1 tsp baking soda
  • pinch salt
  • 1 tsp vanilla extract
  • 1 cup unsalted peanut butter
  • 1 cup gluten-free oats
  • chocolate chips optional

INSTRUCTIONS:

  1. Heat oven to 180 °C (350 °F). Place a parchment paper on a baking dish.
  2. In a bowl, whisk eggs together with brown sugar. Add baking soda, salt and stir well. Add vanilla extract and peanut butter. Mix well and at the end stir the oats or any other flour you decide to use.peanut butter oatmeal cookies
  3. Use a scoop or a spoon to scoop the dough onto your baking dish and form cookies. The size and shape is up to you 🙂 If you want to use chocolate chips, sprinkle them on the top before placing the dish into the oven. peanut butter oatmeal cookies
  4. Bake for about 12 minutes. Then remove from the oven and let it cool.
  5. Store in a sealed container for up to 3 days.peanut butter oatmeal cookies

The Best Protein Peanut Butter Cheese Cake

Protein Peanut Butter Cheese Cake

Flour-less and protein cakes are the best treats ever! When I have cravings I imagine all sort of sweets and cakes which could be between 500-800kcal a piece! Yep! Some people don´t even imagine that some small piece would be that caloric!

When I have time and patience I rather bake something myself. I´m a fan of easy recipes, that´s why I created this blog 🙂 But I do love traditional cheese cakes! So I decided to look for some great recipes... I found one inspiration.. Michael Kory shares on youtube one of his protein baking treats.. Protein Cheesecake!

I adjusted this recipe and used ingredients I found in Germany and this cake just turned out awesome! Healthier version of creamy, awesome, chocolate and peanut butter cheese cake!

This recipe contains peanut butter (which I love so much) so it obviously adds on the calories. One piece contains 210 kcal, out of which only 50 kcal comes from the peanut butter. So if you´d like to snack on something less caloric, go ahead and substitute peanut butter with something different like coffee or caramel 🙂 Or just simply leave it without any additional ingredient. Next time I´m going to try a less caloric version.

Ingredients
  • 650 grams quark quark = cream cheese
  • 3 scoops chocolate whey protein
  • 3 eggs
  • 3/4 cups stevia
  • 1/2 cup peanut butter
  • 2 tbsp cocoa powder
  • 3 tbsp chocolate chips add at the end, after you blend other ingredients
  • 1 tbsp fresh lemon juice
  • 3 tbsp low-fat milk

Preparation:

  1. Warm the oven for 180 degrees Celsius (350 Fahrenheit). Prepare a round baking form (22cm big). Mix all ingredients in a mixer (except chocolate chips), add the chocolate chips at the end.I added milk to the mixture because it was too thick to process the batter in a blender.
  2. Place a parchment paper on the the baking form and spread the batter evenly. Bake in the oven for about 45 minutes. Afterwards, let it cool for about 2 hours and then refrigerate for an hour or two until it´s possible to cut it into slices. The picture below is freshly made cake taken right out of the oven.
  3. I recommend to prepare some topping for the cake. I used 1 tbsp quark mixed with 1 tsp honey. You can also top it with strawberries or any type of fruits you like. I think strawberries would suit the best. You can also make a fresh strawberry sauce and pour it over the cake .

Tip for the strawberry sauce: blend couple of strawberries with 1 tbsp of lemon juice if you like more sour option for the topping! I bet it´s a great combination!
