Simple, Quick and Delicious Matcha Cake

There are many matcha cake recipes out there, but I wanted to try to make something that is simple, easy and delicious. In my opinion, matcha powder is a great ingredient in baking.

Matcha cake is delicious and can be beautiful because of its nice green colour, if you use a substantial amount. I did use very little and therefore you won´t even guess I used the matcha powder.

Health Benefits of using Matcha Powder

Matcha is the finely ground powder made of whole, high-grade green tea leaves. Because you absorb the entire leaf, not only the brewed water , it has much higher health benefits than other green teas. One glass of matcha has the antioxidant content of about 10 glasses of regular green tea. At the same time it has much more caffein – about 70mg in matcha and 24mg in brewed green tea.

Packed with antioxidants

A study discovered that matcha has 137 times the polyphenols (EGCG) than regular green tea. In fact, matcha contains over 60 times the antioxidants of spinach and 7 times the antioxidants of high quality dark chocolate. Some studies also show that polyphenols may have a protective effect against some types of cancer.

Boosts metabolism and burns calories

High amount of EGCG found in matcha has showed increased rate of burning stored fat as energy, as well as decreasing the formation of new fat cells. Other studies have shown that the catechins in Matcha increase the body’s rate of calorie burning each day.

Rich in fiber, chlorophyll and vitamins

The process of shading the matcha leaves creates an increased amount of Chlorophyll, which may help the body eliminate heavy metals and other harmful growth. It also provides vitamin C, selenium, chromium, zinc and magnesium.

Calms the mind and relaxes the body

The L-Theanine in green tea is known to help stimulate alpha brain waves. These waves are known for their ability to help increase focus and concentration.

Enhances mood and energy

Matcha tea is special because the process of shading and harvesting increases the content of L-Theanine, an amino acid that helps balance the caffeine. While matcha may contain the same caffeine as other types of tea, the L-Theanine is known to create calmness without dullness.

Ingredients
  • 1/4 cup coconut oil melted
  • 1 cup coconut sugar
  • 2 eggs, large
  • 1/2 cup almond milk
  • 1 cup spelt flour
  • 1 tbsp Matcha green tea powder
  • 1 tsp baking powder
  • pinch salt

Instructions:

  1. Preheat oven to 170 Celsius (325 Fahrenheit). Line a loaf pan with parchment paper or spray it with a cooking oil.
  2. Mix together melted coconut oil and sugar, set aside.
  3. In a bowl, add almond milk and eggs, and beat until well combined.
  4. In a separate bowl mix the spelt flour, matcha powder, baking powder and salt. Add this mixture to egg mixture, add coconut sugar mixed with coconut oil and blend until smooth.
  5. Pour the batter into the loaf pan. Bake for about 45-50 minutes.
  6. Cool down for about 15 minutes before serving. Enjoy!

Zucchini & Coconut Oil Bread

Whether eaten raw or cooked, there’s so many ways to enjoy zucchini and still get a great amount of vitamins and minerals. Zucchini is one of the most popular summer squashes in Europe and Americas. It can be available all around the year, but it is at its best during late spring and summer seasons.

Health Benefits of Zucchini

Low in Calories

Zucchini is perfect for any type of main dish or as a perfect light side dish for a heavy meal. One cup has about 19 calories, that´s much lower than any other vegetarian side dish like cauliflower or broccoli. Moreover, it contains no saturated fats or cholesterol. Its peel is good source of dietary fiber, which helps to reduce constipation and provides some protection against colon cancers.

Anti-oxidant Power

Summer squash is a great source of manganese and vitamin C. It offers a great combination of conventional antioxidant nutrients. But it also contains other antioxidant nutrients, including the carotenoids lutein and zeaxanthin. These antioxidants are especially helpful in antioxidant protection of the eye. We often think that carrots provide us the most eye related benefits, but we also should not underestimate zucchinis.

Good for your heart

Zucchini is a very good source of potassium. Potassium is a heart-friendly electrolyte, which helps control blood pressure. By boosting your potassium intake, you can decrease a stroke risk, which can naturally lower a chance of developing a heart disease.

A great substitution of pasta

It is very popular to make pasta, noodles or spaghetti out of zucchini. It´s super easy to make it with some spiral slicer or other kitchen gadgets. Then you can just use any type of sauce you normally use with pasta dishes.

Prevents cancer

As mentioned above, the high level of fiber in summer squash prevent toxins from settling in the colon and promote healthy and regular bowel movements. Vitamns C and A are strong anti-oxidants that destroy the carcinogens, which can lead to various types of malignant cancers.

Ingredients
  • 1,5 cup spelt flour Dry ingredients
  • 1/2 cup coconut sugar
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • pinch salt
  • 1/2 tsp cinnamon
  • 1 cup zucchini, shredded Wet ingredients
  • 1/3 cup unsweetened apple sauce
  • 1 egg
  • 1 tsp vanilla aroma
  • 3 tbsp maple syrup
  • 1 1/4 cup almond milk

Preparation

  1. First, preheat oven to 180 degrees Celsius (350ºF) and spray a bread pan with coconut oil cooking spray or lay the parchment paper.
  2. Place all dry ingredients into a bowl and mix well.
  3. Shred zucchini with a grater. Set aside for about 5 minutes until gets more liquid. Then put shredded zucchini into your palms and squeeze water. You can also use any cloth or cheese cloth for squeezing.
  4. Place the rest of the wet ingredients into the pot with zucchini and mix all together.  Then slowly add it to the dry mixture and mix well until your batter is completely combined.
  5. Pour batter into bread pan and bake it for about 50-60 minutes or until a toothpick comes out clean.

We all know that green tea is the healthiest tea choice we can make. Green tea is loaded with many antioxidants, it improves brain function, fat loss, lower risk of cancer, etc. We also know that almond milk is very healthy compared to regular milk. So, the combination of almond milk and green tea is wonderful. Drinking combination of these 2 ingredients is a great way to lose weight and detoxify your body.

What´s so special about this combination?

Green tea, as mentioned above, is rich in antioxidants, minerals, flavenoids, etc. Almonds are rich in vitamins, minerals, proteins, fibers and antioxidants. How this combination goes well with each other? While almond milk helps to decrease the effects of caffeine from the tea, the green tea helps in digesting the almond milk.

  • 1 cup boiled green tea Use green leaves, about 2 tablespoons

How to prepare this tea?

This tea it´s very easy to make. The best way is to drink this tea when it´s warm.

To make sure we get all benefits of this tea, get a good quality green tea (leaves, not tea bags). You can buy good almond milk in an organic store or make it yourself. To make it yourself, take handful of almonds and soak them in the warm water for about half an hour. Peel of their skin and mix it well in a blender. Add some water and strain to get the pure liquid.

To reach some loss weight, you must drink it 2-3 times a week (at least). However, people with some kidney, bladder or other urological problems might first consult their doctors before drinking this tea on regular basis.

Instructions:

  1. boil the almond milk and let it cool a bit.
  2. When the almond milk is still hot, pour 1 cup of green tea and stir
  3. Cover the hot mixture for about 2-3 minutes
  4. Drink 1 cup of this tea every 2 hours

*Note: Another alternative to use instead of green tea leaves is matcha powder. In this case, use 5 cups of almond milk + 2 tablespoons of matcha powder. The instructions stay the same.
